Paneer Paratha

Indian bread stuffed with cottage cheese.

Time Required: 20 Minutes

Paneer Paratha

Ingredients:
2 Cups Wheat Flour
1 Cup Crumbled Paneer / Cottage Cheese
3 Green Chilies, Chopped
3 sprigs of Coriander Leaves, Chopped
1tsp Jeera / Cumin Powder
Oil for roasting
Salt to taste

Method:
Mix Wheat flour with water to a dough and divide into balls.  Mix Paneer, Green Chilies, Coriander leaves, Salt and Jeera.

Roll out the dough balls on a floured surface to a circle.  Spread Paneer mixture on one half of the circle and cover with the other half.  Press the edges and roll gently.  Roast on both sides and serve with vegetable dish,  raitha / curds and pickle.

Bhajra Jowar Paratha

This bread is prepared by mixing Sorghum flour and Black Millet flour with chopped Spring Onions, Ginger and Chilies.

Time Required: 25 Minutes
Makes: 8 Parathas

1 Cup Jowar/Sorghum flour
1 Cup Bajra/Black Millet flour
1 Cup Chopped Spring Onion Scallions
1tbsp Green Chili – Ginger paste
1tsp Garlic paste (Optional)

Plain Kulcha

Indian Bread using refined flour.

Time Required: 45 Minutes

Kulcha Recipe

Ingredients:
2 Cups Maida
1tbsp Curds
½ Cup Milk
¼ tsp Soda-bi-carb / Cooking Soda
1tsp Sugar
1tbsp Oil
1tsp Chili Powder
Coriander leaves
Salt to taste

Kulcha Recipe

Method:
Mix Maida with Sugar, Soda, Salt. Add Milk and Curds just enough to roll into a dough. Cover the dough with a wet cloth and keep aside for 20 minutes. Divide into balls.

Pudina Chutney Paratha

Kaddu Palak Paratha

Indian bread with Sweet Pumpkin and Spinach.

Time Required: 30 minutes

Ingredients:
1 Cup grated Kaddu / Sweet Pumpkin
1 Cup Chopped Spinach
1½ Cups Wheat Flour
1 tsp Chili Powder
2 Green Chilies, Chopped finely
Oil for roasting
Salt to taste

Method:
Mix all the ingredients except for Oil. Add water and bind to a dough. Divide into balls. Roll out each ball on a floured surface into concentric circles. Roast on both sides using Oil, Ghee, or Butter. Serve hot with Raitha, Vegetables, and Pickles.

Palak Paratha

Indian bread prepared used Spinach. Popeye would certainly love it.

Time Required: 30 Minutes

Palak Paratha

Ingredients:
1 bunch Palak / Spinach
1 – 2 tbsp Green Chilies paste
3 Cups of Wheat Flour
Ghee / Clarified butter for roasting
Salt to Taste

Palak Paratha

Method:
Clean, wash, and remove the stalk of Palak leaves. Blanch Spinach and sieve. Let it cool. Grind the leaves along with Green Chilies paste.

Onion Paratha

Indian bread stuffed with fried Onions.

Time Required: 30 Minutes

Onion Paratha

Ingredients:
1 Cup Wheat flour
Oil for roasting
3 Onions, chopped
2tbsp Oil
1tsp Chili Powder
1/2 tsp Saunf Powder
1tsp Aamchur / Dry Mango Powder
1tsp Jeera Powder
1 Green Chilies, Chopped finely
Salt to taste

Method:
Mix wheat flour, salt and water to a dough and keep aside. Heat Oil and add Onions and fry until they turn brown. Add Chili, saunf, jeera, aamchur, Greeen Chilies and saute. Add Salt and mix well.

Divide the dough into balls. Roll out each of the balls on a floured surface into a circle and put Onion mixture on one half of the circle. Cover with the other half and gently roll into a circle. Roast on both sides sprinkling with oil. Serve hot with raitha, side dish, pickle or salad.
