In Karnataka, during festivals or auspicious occasions, Kosambari (salad) is a must on the menu. Here is a unique recipe to prepare Kosambari using Pear and Carrot.
Time required: 15 Minutes
2 Large Pear, Peeled and diced into small pieces
2 small Carrots, Peeled and grated
1/4 Cup Roasted Peanuts
Juice of half Lemon
1 Chili, Chopped finely
Few springs of Coriander leaves, Chopped finely
1/4 Cup freshly grated Coconut
1 tsp Oil
1/2 tsp Mustard Seeds
A pinch of Hing
Few Curry leaves
Salt to taste
Peel and dice the Pear into small pieces and remove to a mixing bowl. Peel Carrots and grate them and add to the bowl. Add Peanuts, Lemon, Chili, and Coriander leaves and toss gently.
Heat Oil and add Mustard seeds and when they splutter, add Hing, Curry leaves. Let it cool. Add this to the Pear mixture and mix gently.
Remove to a serving dish and serve.
