Summer is the season for Musk Melon and you can find carts loaded with this delicious fruit in every corner of Bangalore. Salad with fruit eliminates the need to add refined sugar to the salad.
This salad has an unusual combination of Pomelo and Coconut.
Time Required: 15 Minutes
Ingredients:
5 – 6 segments of Pomelo
2 tbsp Coconut, Chopped and roasted
1 Onion, thinly sliced, separated into rings
1 Fresh Red Chili, Chopped
1 tbsp Soya Sauce
1 tbsp Sugar
1 tbsp Lemon juice
1 tbsp Roasted Peanuts, coarsely chopped
1/2 tbsp Sesame seeds, roasted
1 tbsp Chopped Parsley
1tbsp Oil
Salt to taste
Method:
Peel Pomelo segments and break up the sections into big chunks. Heat Oil and add the Onion rings and fry until brown. Remove them on kitchen towel. Mix Red Chilies, Soya Sauce, and Sugar in a bowl. The dressing for the salad is ready. In a salad bowl, mix Pomelo, dressing, Peanuts, Sesame Seeds, and Coconut. Add Salt and toss gently.
Garnish with Parsley and Onions and serve.

Ingredients:
1 Cup Soaked Poha / Beaten Rice
1 Cucumber, Chopped finely
1 Tomato or few Cherry tomatoes (halved), Chopped finely
1 Onion, Chopped finely
1 Green Chili, Chopped finely
1 small Green Mango, Chopped finely (Optional)
1tbsp Roasted Peanuts
Few Sprigs of Coriander leaves, Chopped finely
Few Lettuce leaves, torn
Few Mint leaves, Torn
For the dressing:
2tbsp Tamarind Pulp
2tbsp Olive Oil
1tsp Sugar
Chili flakes to taste
Salt to taste
Ingredients:
2 Cups of cooked Noodles
1 Cucumber, Sliced
1 Tomato, Chopped
½ of Green, Yellow, and Red Pepper / Capsicum, Sliced
1tbsp Roasted Peanuts
1tsp Roasted Sesame Seeds
Few Shallots, Chopped
Juice of one Lemon
¼ Cup Warm water mixed with a teaspoon of Honey or Jaggery
For the dressing:
½ Cup Roasted and Peeled Peanuts
1tbsp Virgin Olive Oil
1/2 “ Ginger
2-3 Pods Garlic
1tbsp Vinegar
½ tsp Chili Flakes
1 Red Chili, 1 Green Chili
3 – 4 Peppercorns
Salt to taste
Ingredients:
1 Apple
½ Thothapuri Mango / Raw Mango
½ tsp Red Chili Powder
Juice of ½ Lemon
1 tsp Sugar
2 Sprigs Coriander leaves, chopped finely
Few Thai Basil, chopped finely
Salt to taste
Method:
Slice Apple and store in cold water. Slice Raw Mango into thin slices and remove to a mixing bowl.
Time Required: 10 Minutes Ingredients:
4 Radishes
½ Cup Fresh Grated Coconut
Juice of 1 Lemon
1 tsp Oil
½ tsp Mustard Seeds
¼ tsp Turmeric Powder (Optional)
Few Curry Leaves
2tbsp Chopped Coriander leaves
2 Green Chilies, Chopped finely
Salt to taste
Method:
Peel and grate Radishes, remove to a mixing bowl. Heat Oil and add Mustard Seeds and when they splutter, add Curry Leaves, Green Chilies and Turmeric Powder and remove from heat. Let it cool. Add this seasoning to the Radish along with Coconut, Lemon Juice and Salt. Mix well and serve.

1 bunch Lettuce, Chopped or roughly torn
1/2 Yellow Pepper, Sliced
1 small Onion, Chopped finely
1 Big Red Chili, Sliced
1tsp Olive Oil
Juice of one Lemon
1tsp Crushed Pepper
Salt to taste
Method:
Toss all the ingredients together. Chill and serve.
