You must be wondering about this khand that you had not heard till now. You have heard of Uttarakhand, Jharkhand, Baghelkhand, Bundelkhand, and now Dragonkhand! No, not made in China, made right here in an Indian Kitchen. I came up with this recipe using Dragon Fruit and it turned out delicious. The seeds of the Dragon Fruit adds a nice crunch to this Shrikhand.
Time required: 10 minutes + Yogurt cheese making time
2 Cups Hung Curd / Yogurt
1 Red Dragon Fruit
Sugar to taste (optional)
Scoop out the flesh from the Dragon Fruit and either mash it or pulse it in a blender. Beat the hung yogurt with Sugar until you get soft peaks.
Mix the Dragon Fruit pulp into the yogurt.
Remove to a serving bowl.
Garnish with more Dragon fruit slices, chill and serve.
Using Dragon fruit you can make Banana Dragon Fruit Smoothie.
