Fresh Green Chickpeas start appearing in the market at the end of December and continue till January end. A wide range of dishes are prepared using the green chikpeas. Here is a simple stir-fry with Tomatoes and Onions.
2 cups Fresh Green Chana/Chickpeas, shelled
1 tbsp Jeera and Coriander Powder
1 large Onion, chopped finely
2 Green Chillies, slit
1 inch Ginger, Juliennes
2 cloves Garlic, crushed or chopped
A pinch of Sugar (Optional)
1 tsp Oil
1/4 teaspoon Mustard seeds
Few sprigs of Coriander, chopped
Cook Channa in an open pan with little Salt until soft and keep it aside.
Heat Oil, add Mustard seeds and when they splutter, add Green Chilies, Ginger, Garlic, and Onions.
Stir for two minutes. Add Tomatoes and cook until Tomatoes are soft.
Now, add the cooked Channa and stir.
Add Coriander and Jeera Powder and stir for a minute. Add Salt.
Add a pinch of Sugar.
Remove to a serving dish and garnish with Coriander leaves. Serve hot with your favorite bread.
