Padavalkayi Masala is a side dish prepared using Snake Gourd. A simple, yet tasty dish.
Time Required: 25 Minutes
1 Padavalkayi / Snake Gourd, Chopped
1 Onion, Chopped finely
1/2 tsp Turmeric Powder
1 tsp Chili Powder
1/2 tsp Garam Masala Powder
2 tbsp Oil
1 tsp Mustard Seeds
1 tsp Jeera / Cumin Seeds
Few sprigs Coriander leaves, Chopped finely
Salt to taste
For the Masala:
1/2 Cup Roasted and Peeled Groundnuts
1/2 Cup Fresh Grated Coconut
1″ piece Ginger
3 – 4 Cloves Garlic
Grind the ingredients to a paste and keep it aside. Heat Oil, add Mustard Seeds, Jeera and when they splutter, add Turmeric Powder. Add Onion and saute for a minute or two.
Add Masala paste, Chili Powder, Salt, and Garam Masala Powder and mix well.
Add one cup or more water and cook until the vegetable is tender.
Remove Padavalkayi Masala to a serving dish and garnish with Coriander leaves. Serve hot with your choice of Indian Bread.
