Chapparada Avarekayi Rasa is a simple to make side dish.
Time Required: 20 Minutes
2 Cups, Chopped Chapparada Avarekayi (Lablab bean / Indian Flat Beans)
2 Small Tomatoes, Chopped finely
2 tsp Red Chili Powder
A pinch of Hing / Asafoetida
1 tsp Turmeric Powder
1tsp Mustard Seeds
1/4 Cup grated fresh Coconut
Coriander leaves for garnishing
Salt to taste
Heat Oil, add Mustard Seeds, and when they splutter add Turmeric Powder and Hing.
Add Chapparada Avarekayi and a cup of water. Mix well. Add Jaggery.
Close the vessel and cook until the vegetable is soft. Add Coconut and mix well.
Remove to a serving dish and garnish with Coriander leaves.
Serve hot with your choice of Indian Bread.
