A very interesting salad recipe using Pineapple.
Time Required: 25 Minutes
½ Pineapple, cut horizontally, with the leaves intact
1 Mango or Peach, Peeled and Sliced
1 Apple or Pear, Cored, peeled, and cut into julienne
½ Green Capsicum, finely chopped
1 tbsp Mint / Pudina, Chopped
For the dressing:
2tbsp Olive Oil
Juice of half lemon
Salt and Pepper to taste
½ tsp Chili Flakes
Scoop the flesh of the Pineapple and reserve the flesh. Discard the hard center part. Keep aside the Pineapple shell to serve the salad.
Mix the ingredients for the dressing in a bowl and whisk.
In a salad bowl, mix Pineapple, Apple, Mango, Capsicum, and Mint together, and the dressing.
Fill the Pineapple shell with Pineapple Salad and serve.
