Mashed Potato and spices mixture balls dipped in batter and deep fried. This is sandwiched between pav (a type of bread) a very popular snack in the state of Maharashtra.
Time Required: 1 Hour
1 Onion, Chopped
4 Green Chilies, Chopped
1tbsp Coriander Leaves, Chopped
Few Curry Leaves, Chopped
1tbsp Lemon Juice
1/2 Cup Fresh Grated Coconut
1 Cup Gram Flour
A pinch of cooking Soda
1/2tsp Chili Powder
1tsp Mustard Seeds
1/2tsp Turmeric Powder
Salt to taste
Boil and peel Potatoes. Mash them and keep it aside. Heat Oil and add Mustard Seeds and when they start to splutter add Turmeric Powder, Green Chilies, Curry Leaves and Onion. Fry until the Onions turn translucent. Add mashed Potatoes, Salt, Coriander Leaves and Lemon Juice and mix well. Divide this mixture into lemon sized balls.
Add required amount of water to Gram Flour and mix well. Add Salt, Chili Powder and Soda to the batter and mix to a smooth batter.
Heat Oil in a frying pan. Dip the Potato mixture balls in the Gram Flour batter and deep fry them until golden brown. Remove on kitchen towels.
Assembling Vada Pav:
Cut the Pav into half horizontally, on one part smear a tsp of Mint Chutney and on the other smear Garlic Chutney.
Now sandwich a Vada between the two Pav pieces and gently press it by hand.
Serve Vada Pav with Sweet Chutney.
