A tasty evening snack prepared using raw vegetables like Cucumber, Raw Mangoes and Tomato. Cucumber Churmuri is also a great snack for calorie watchers.

2tbsp Coriander Leaves
1tbsp Pudina/Mint Chutney
1tsp Green Chilies Paste
1tsp Red Chili Powder (Optional)
1tbsp Congress Kadalekayi/Masala Peanuts
1 Cup Kadalepuri/Murmura/Puffed Rice
Salt to taste
Peel and slice Cucumber vertically into slices and arrange in a tray. Grate Carrots, chop Onions and Coriander finely and remove to a mixing bowl. Add Lemon Juice, Salt, Masala Peanuts and Chili Powder and mix well. On one side of the Cucumber apply a thin layer of Mint Chutney as shown in Picture1.
Take two spoons of Carrot mixture and put it over each Cucumber slice as shown in Picture2.
Garnish with Puffed rice as shown in Picture3 and serve immediately.
Note: Add Salt, Chili Powder, Chili paste according to your taste.
