Spinach Cantaloupe Salad with Mint

Summer is the season for Musk Melon and you can find carts loaded with this delicious fruit in every corner of Bangalore. Salad with fruit eliminates the need to add refined sugar to the salad.

Spinach Cantaloupe Salad with Mint

Ingredients:
10 – 15 Spinach leaves
1 Musk Melon / Cantaloupe, Diced
1 Sweet Potato, Boiled and sliced
½ Yellow or Red Bell Pepper, sliced
1 Ripe Red Chili, sliced
Few sprigs of Mint

For the dressing:
1 tbsp Mint Chutney or Sauce
1 tbsp Vinegar
2 – 3 tbsp Olive Oil
2 small cloves Garlic, minced
Salt to taste

Method:
Mix the ingredients for the dressing in a bowl.

Arrange Spinach leaves on a tray or plate.
