6 Slices of Bread
1 Bunch Spinach
1 Cup Sweet Corn
1/2 Capsicum, Chopped (Optional)
½ Cup Grated Cheese
Chili Flakes to taste
3 Pods Garlic, Chopped (Optional)
Salt to taste
Wash and chop Spinach. Steam Corn and keep aside. Heat Oil add Garlic, Corn and Spinach and toss. Remove from heat and add Salt and Chili flakes and mix well.
Spread this mixture on one slice of bread and over this spread some cheese. Close with another slice of bread. Grill and serve hot with sauce, wafers and a drink.
