Light dinner keeps you agile the next day. Early dinner the better. Though this is easy said than done! Pumpkin is a powerhouse of fibre and when teamed with Roti is a perfect way to end the day.
About Pumpkin: Other common names are Giant Pumpkin, great pumpkin, melon pumpkin, pumpkin, red gourd, red pumpkin, squash, squash gourd, Turks cap gourd, winter squash. In Hindi it is known as Lal Kaddu, Sanskrit it is Kusmandakah. Botanical name is Cucurbita maxima and belongs to Cucurbitaceae (Pumpkin) family. Pumpkin is native of North America and North Eastern Mexico.
Pumpkin can be cooked with or without the skin. For vegetable carving, this is a great vegetable as it is tough on the outside and soft inside. The seeds of this vegetable is also edible and used in many dishes. Very good when you want to thicken soups or gravy.
An early dinner, and a 20 minute walk after that is a perfect way to wind up the day. If you meditate before sleeping, that definitely is a passport to a great sleep!
