One of my house help “B” shared this recipe. I tried this immediately and loved the combination of Potatoes and Ridge gourd in a creamy gravy.
Ingredients:
2 Potatoes/Alu with skin, diced
1 medium size Ridge gourd/Heerekayi
1 tbsp Khuskhus / Gasgase / Poppy seeds – soaked in water
2 to 3 Green chilies
1″ Ginger
2 to 3 pods Garlic
1 cup grated Coconut
3 tbsp Oil
A pinch of Turmeric powder
1 tsp Mustard seeds
Salt to taste
Method:
Combine Coconut, Green chilies, Khuskhus, Ginger, and Garlic and blend to a smooth paste. Keep it aside.
Heat Oil, add Mustard seeds and when they splutter, add Turmeric powder. Add Potatoes and stir for 2 to 3 minutes. Add Heerekayi and stir.
Add the Coconut paste and mix well.
Add half a cup of water and cook until done.
Serve hot with plain Rice or Roti.
