Today is the second day of Navaratri. Here is a recipe to make delicious Coconut Laddoo. Extremely easy to make and light on the palette.
Time required: 20 minutes
1½ Cups Desiccated Coconut
½ cup + 4 tbsp Condensed Milk
1 Cardamom, crushed
2 tbsp Pistachios, chopped finely
Little more Desiccated Coconut for the final coat on Laddoos
Mix Coconut and condensed milk and Cardamom powder.
Cook on low flame until it forms a mass.
Add Pistachios and mix.
Remove from heat and when hot bind into Laddoos (balls).
Roll the Laddoos in Desiccated coconut.
Garnish with your choice of nut.
Store in refrigerator.
