Carrot Shavige Payasa will be an addition to your festival recipe list and might even top in family ranking as the most delicious. Today is the first day of dasara and very auspicious to Hindus all over the world. The festival is usually started by preparing a sweet and a Payasa is a must in Kannada households on this day.
Ingredients:
2 Carrots, peeled and grated
1/2 Cup Shavige / Vermicelli
5 Cups of Milk
4 to 8 tbsp Sugar
6 Almonds, soaked and peeled
1/2 tsp Elaichi/Cardamom Powder
Few Cashew nuts, roasted in Ghee
Few Raisins, roasted in Ghee
Method:
Peel and grate Carrots.
Cook the Carrots in little Milk until soft. Grind Carrot with Almonds to a paste and keep aside.
Boil the rest of the Milk and add Vermicelli and cook for 2 to 3 minutes. Stir continuously. Cook until Vermicelli is soft.
Add Sugar, Carrot paste and cook for 2 to 3 minutes.
Add Elaichi, roasted Cashew nuts and Raisins. Mix well.
Remove to a serving dish and serve hot.
