This is an instant pickle prepared with raw Mangoes, which is sauteed in hot Oil. When you feel like having a pickle without waiting for it to mature, you can prepare Instant Mango Pickle.
Time Required: 15 Minutes
2 Big Raw Mangoes
1½ tbsp Fried and Powdered Methi (Fenugreek) Seeds
¾ Cup Oil
4tsp Mustard Seeds
4tsp Turmeric Powder
Salt to taste
Chop the Mangoes into big pieces and keep it aside. Heat Oil in a kadai and add the Mustard Seeds, when it starts spluttering add Turmeric Powder. Reduce the flame of the stove and add the Mango pieces.
Stir and fry until the Mango peels turns slightly yellow. Now add the Methi Powder and Salt and mix well.
Instant Mango Pickle will last for a long time if stored in the refrigerator.
