Noodle Peanut Salad

This dish is a complete and wholesome meal.

Peanut Noodle Salad

Ingredients:
2 Cups of cooked Noodles
1 Cucumber, Sliced
1 Tomato, Chopped
½ of Green, Yellow, and Red Pepper / Capsicum, Sliced
1tbsp Roasted Peanuts
1tsp Roasted Sesame Seeds
Few Shallots, Chopped
Juice of one Lemon
¼ Cup Warm water mixed with a teaspoon of Honey or Jaggery

Peanut Noodle Salad

For the dressing:
½ Cup Roasted and Peeled Peanuts
1tbsp Virgin Olive Oil
1/2 “ Ginger
2-3 Pods Garlic
1tbsp Vinegar
½ tsp Chili Flakes
1 Red Chili, 1 Green Chili
3 – 4 Peppercorns
Salt to taste

Peanut Noodle Salad

Method:
Grind the ingredients for the dressing to a paste. Remove to a mixing bowl.

Add Honey water to the sauce to thin it.

Add the sauce to the cooked Noodles into the sauce.

Top it with Cucumber, Capsicum, Cherry Tomatoes, Peanuts, Scallions, and Sesame seeds.
