Though Zucchini is extensively used grilled or baked, here is a recipe where Zucchini sticks are deep fried until crisp.
1 medium sized Zucchini
1 tsp or more Italian herb blend of dried oregano, basil, thyme
1 Cup Refined Flour
1tsp Garlic powder
Salt to taste
1 or 2 tsp Chili Flakes
1 Cup Bread Crumbs
Oil for deep-frying
Cut Zucchini into 2 inch by 1 cm sticks. In a mixing bowl, mix Flour, herb, Garlic powder, Salt, Chili Flakes with half cup water and mix well. If the mixture is too thick, add more water and mix to a batter consistency.
Dip each of the the Zucchini sticks in the flour.
Roll each one of them in breadcrumbs.
Deep fry until golden brown.
Remove onto a kitchen towel to drain off excess oil. Remove to a serving dish.
Serve hot with your choice of sauce.
