Occasionally Iyengar Bakery Toast would be the evening snacks at home. I still crave to bite into one sometimes.
Time Required: 20 Minutes
Few slices of Bread
1 Onion, Sliced
1 Tomato, Chopped
1 Carrot, Peeled and grated
1 or 2 Green Chilies, Chopped finely
½ tsp Chili Powder (Optional)
½ tsp Turmeric Powder
½ tsp Jeera / Cumin Seeds
½ tsp Mustard Seeds
Juice of half Lemon
Few sprigs of Coriander chopped finely
Salt to taste
Heat Oil, add Jeera, Mustard Seeds, and Turmeric Powder.
Add Green Chilies and Onion and saute for a minute.
Add Carrot and stir for a minute.
Add Tomatoes and cook for a minute.
Add Chili Powder, Coriander Leaves, and Salt. Mix well.
Remove to a bowl and keep aside.
Toast the bread slices lightly on both sides.
Spread a spoonful of the Onion mixture on each of the toast.
