There was a Red and Yellow Pepper along with some Okra in the fridge and I came up with this recipe using all of them. Thankfully everyone relished it with Phulkas.
Time Required: 15 Minutes
2tbsp Olive Oil or any other refined Oil
1tsp Jeera / Cumin Seeds
1 Red Pepper / Capsicum, Diced
1 Yellow Pepper / Capsicum, Diced
20 Bhindi / Okara, Chopped into roundels
1tsp Red Chili Flakes
5 – 6 Pods of Garlic, Chopped
1 Onion, Chopped finely
Juice of 1/2 Lemon
Salt to taste
Heat 1tbsp, add Bhindi and fry until crisp, keep aside. Heat 1tbsp Oil, add Jeera, Onions and Garlic and saute for a minute. Add the red and yellow peppers and stir fry for another minute. Add Bhindi, Chili flakes, Salt and Lemon Juice and toss gently. Serve hot with your choice of Indian Bread.
