Gujarati Kadhi is a yogurt based dish very popular in Gujarat.
Time Required: 10 Minutes
6 Cups Buttermilk
2tbsp Gram Flour
Coriander leaves for garnishing (Optional)
Salt to taste
For the seasoning:
1tsp Ghee (Clarified Butter)
1tsp Jeera (Cumin Seeds)
1tsp Mustard Seeds
2 Bay Leaves
Few Curry Leaves
1tsp Turmeric Powder
1tsp Chopped Ginger
2 Green Chilies, Chopped
Mix little Buttermilk with the Gram Flour and keep it aside. Heat Ghee and Oil in a kadai and add Jeera, Mustard and Bay leaves.
When the Jeera and Mustard start to splutter add Curry Leaves and Turmeric powder. Add Ginger and Green Chilies and stir. To this add the Butter Milk and stir.
Add Gram Flour mixture and cook for 3 to 4 minutes until the flour gets cooked. Keep stirring all the while.
Add Sugar and Salt.
Mix well and garnish with Coriander leaves.
Serve Gujarati Kadhi with Rice, Khichdi or Phulka.
