Carrot Pudding. Gajar Halwa is very easy to make and is usually served as a dessert when unexpected guest drop in for lunch/dinner. Tastes great when served hot with a dollop of Vanilla ice cream.
Time Required: 20 Minutes
2 Cups Grated Carrots
6 tbsp Ghee/Clarified Butter
1/2 Cup Khoya / Mawa / Khova /Dehydrated Milk
1/2 Cup Sugar
½ tsp Elaichi/Cardamom Powder
1tbsp Dry Fruit and Nuts (Grapes, Almonds, Cashew nuts, Pistachios) fried in ½ tsp Ghee
Heat Ghee in a thick-bottomed pan, add Carrots and saute for 2 minutes on medium flame.
Add Khoya and stir for three minutes. Next add Sugar and Elaichi Powder and mix well. Cook until Carrot turns soft.
Add the nuts, mix well. Serve to a serving dish and serve hot with a dollop of ice-cream.
