Bamboo Rice Payasam / pudding is prepared using Bamboo Rice, which is known as Mulayari in Malayalam.
Time Required: 1 hour
1 Cup Bamboo Rice, preferably Broken
1 Cup Fresh Grated Coconut
¼ Cup Chopped fresh Coconut
1 or 1½ Cup Grated Jaggery
½ tsp Dry-Ginger Powder
1 tsp Jeera / Cumin Powder
¼ tsp Cardamom Powder
2 tbsp Chopped Assorted Nuts
1tsp Ghee / Clarified Butter
Grind grated Coconut to a paste.
Heat Ghee and fry the chopped nuts until they turn golden brown. Keep aside.
Soak Bamboo Rice for 24 hours. Cook in pressure cooker until soft.
Add 1 cup water and Jaggery in a separate vessel and heat until Jaggery melts. Sieve and keep aside.
Remove to a thick-bottomed pan. Add Coconut paste and Coconut pieces mix well. Let it cook for 5 minutes.
Add Jaggery syrup cook for another 5 minutes.
Add Ginger, Cumin, Nuts, and Cardamom and mix well.
Add nuts and serve hot.
