A favorite among kids as there is no trace of Chilies in this Sweet Lemon Pickle. Perfect when the doctor puts you on no-chili diet.
Time Required: 25 Minutes
500gms/17 Ounce Lemon
100gms/3.5 Ounce Salt
1½ tbsp Methi/Fenugreek Seeds, Fried and Powdered
½ tbsp Turmeric Powder
¼ tsp Asafoetida/Hing
1½ tbsp Ginger (Optional)
4 – 5 tbsp Sugar
Clean and cut the lemons into 8 pieces. Cut Ginger into juliennes. Mix all the ingredients except for Sugar in a mixing bowl. Remove to a clean, dry glass jar and keep it aside for 15 days.
Add Sugar and mix the pickle well.
