Avakai is the most popular pickle of Andhra Pradesh. This pickle is served in almost all restaurants across Andhra and its demand has triggered the setting up of many small scale industries producing this exotic hot pickle.
Time Required: 40 Minutes + Maturing time
3 Raw Mangoes
3/4 Cup Chili Powder
3/4 Cup Mustard Powder
3/4 Cup Salt
8 – 10 Garlic Pods
1 Cup Oil
1 tbsp Fenugreek Powder
1/4 tsp Fenugreek Seeds
1tbsp Turmeric Powder (Optional)
Chop the Mangoes into big pieces with the skin. Air-dry for 1 hour.
Mix all the other ingredients with Oil to make a thick Masala paste. Mix the paste with the Mangoes.
Close the jar tightly and keep it aside for 4 or 5 days.
On the 6th day open the jar and mix the pickle with a dry spoon and close the lid.
Serve with hot Rice and Ghee.
