Heerekayi Chutney is prepared using Ridge Gourd and Coconut. This is known as Heerekayi Gojju in Udupi Region.

1 Cup Fresh Coconut
1/2 Cup Ridge Gourd, Peeled and Cubed or Ridge Gourd Peel
1 tbsp Kadalebele / Bengal Gram
1/2 tbsp Uddinabele / Black Gram Split(Urad Dal)
1/4 tsp Asafoetida(Hing)
6 Dry Red Chilies
1 tbsp Tamarind Pulp
Salt to taste
For the Seasoning:
1 tbsp Oil
1 tsp Mustard Seeds
Few Curry Leaves
Roast Red Chilies and keep it aside.
Roast Bengal Gram, Urad Dal, Hing in little Oil until they change color. Add Coconut and remove from heat.
Cook the vegetable or the peel with little water. Drain and reserve the water.
Grind Coconut, the fried ingredients, Ridge Gourd, Tamarind pulp and salt to a paste. Add the reserved water if needed.
Heat Oil and add Mustard Seeds and when they splutter add Curry leaves and add this to the Chutney and mix well.
Serve with hot Rice and Raw Oil.
