Whole Lemon Pickle

I had an school friend who was a Kerala Iyer and we used to have lunch together. Her lunch box always contained watery curd rice with one whole yellow Lemon pickle dunked into it. Yumm! Mouth watering….This is the recipe of whole lemon pickled, which goes very well with Curd Rice.
Time Required: 10 Minutes + time taken to mature
Ingredients:
10 Whole Lemon
2tbsp Chili Powder (Optional)
2tsp Turmeric Powder
4tbsp Salt
½ tsp Hing/Asafoetida
Method:
Wash and wipe dry the Lemons. Using a fork prick the Lemons. Mix Salt, Turmeric Powder, Hing and Lemons and store in a jar / bottle. After 3 to 4 days add Chili Powder and shake the bottle. Leave it aside for 10 to 15 days.
