Akki Thambittu

This is sweet dish is prepared using rice flour.  This is usually prepared during festivals and especially on Mangala Gowri Vrata and Nagara Panchami.

Time Required: 15 Minutes + Soaking and Drying time

Akki Thambittu

Ingredients:
1 Cup Rice or Rice Flour
1 Cup Grated Jaggery
1/2 Cup Water
1/2 Cup Ghee / Clarified Butter

Method:
Soak Rice in water for 2 hours.  Drain the water and spread on a cloth and let it dry.  Grind Rice to a flour.  In a Kadai roast the Rice flour for 2 to 3 minutes stirring continuously and remove to a tray and keep it aside.  In the same Kadai add Jaggery and water and let the Jaggery melt.  Seive the Jaggery syrup and keep it back on heat / flame.  Add Ghee to the Jaggery syrup and stir.  Add Rice flour and mix well to form a dough.  Remove from heat and tie into balls.
