Khandvi is prepared using Gram Flour and Yoghurt. It is a low calorie, fiber-rich snack.
Time Required: 30 Minutes
1 Cup Besan / Bengal Gram Flour
1 Cup Curds / Yoghur
1½ Cups of Water
Juice of ¼ Lemon
2 tsp Ginger-Green Chilli Paste
½ tsp Haldi / Turmeric Powder
A pinch of Hing / Asafoetida
Salt to taste
For the seasoning:
1 tsp Rye / Mustard Seeds
¼ tsp Hing / Asafoetida
5 to 6 Curry Leaves
½ tsp Green Chilies, chopped finely (Optional)
4 tbsp freshly grated Coconut
Few sprigs Coriander leaves, chopped finely
In a mixing bowl, mix Besan, Curds, Water, Lemon Juice, Ginger-Green Chili paste, Turmeric Powder, Hing, and Salt.
Pour this into a non-stick vessel and mix well. thick.
Cook on low flame and stir continuously for 8 to 10 minutes or until it becomes
Grease a plate on the reverse using Oil.
Spread thinly a spoonful of the batter on the plate. Let it cool.
Cut into thin strips and roll each strip.
Arrange the rolls (Khandvi) in a plate.
Heat Oil for the seasoning, and add Mustard Seeds and when they splutter, add Turmeric Powder, Asafoetida, Curry leaves, and Green Chilies.
Pour this over the arranged rolls (Khandvi) in the plate.
Sprinkle Coconut and Coriander leaves over the rolls and serve.
