Vegetables tossed in herbs and tomato puree.
Time Required: 20 Minutes
1 Green Capsicum
1 Red Pepper
1 Yellow Pepper
Few Italian Basil leaves
1/4 tsp Dry Oregano or few leaves of fresh Oregana
1 Cup Tomato Puree
1tsp Chili Flakes
3tbsp Olive Oil
Cheese for garnishing (Optional)
Salt to taste
Chop the vegetables into big pieces. Heat one tbsp Oil and add Onions and saute for a minute. Next add the rest of the vegetables and stir fry for two minutes.
Heat Oil in a pan and add Tomato puree and stir. Add Sugar, Oregano, Chili Flakes, Basil, and Salt. Stir for two to three minutes.
Add the sauce to the vegetables and toss gently.
Remove to a serving dish and garnish with Basil and grated cheese. Serve hot with Pasta or bread.
