Sweet dish prepared using Rice paste cooked in Milk. Mango Phirni is a very popular dessert of Kashmir.
Time Required: 1 Hour + Chilling Time
½ Cup Basmati rice
½ litre Milk
2 Green Cardamon pods, Crushed along with a tsp of Sugar
1 Cup Sugar
2tbsps flaked Almonds
½ Cup Mango puree
½ Cup Mango, dice into 1/2-inch pieces
2tbsps Cashew nuts, Crushed
Slivers of shelled Pistachios to garnish
Soak Rice in 100ml water for 30 minutes. Grind Rice to a paste.
In a thick-bottomed pan add Milk and let it come to a boil. Now, add the Cardamoms and reduce the heat and simmer for five minutes. Add the Rice paste and cook for 15 minutes, stirring continuously.
Stir in Sugar, Almonds, Pistachios, Cashew nuts, and Raisins and simmer for another 10 minutes.
Remove from heat and allow the mixture to cool.
Stir in the Mango puree and diced Mango.
Chill the mixture in the refrigerator and serve.
