Eggless Orange Cup Cake is a favorite at home and I made this batch to usher in the New Year!

Time Required: 45 Minutes
30 gms Butter
75 gms (1/3 cup + 1tbsp) Powdered Sugar
100 gms (1/2 Cup) Maida
½ + ¼ tsp Baking Powder
¼ tsp + ½ tsp Soda bi carb
¼ Cup Orange pulp
1 tsp Orange zest
2tbsp Cashew nuts, crushed
¼ cup Milk
Pre-heat the oven at 180 degrees.
Line the tin with paper cups
Sieve atta, baking powder and soda separately
Beat butter and sugar till creamy, fluffy and light separately
Add milk and Ata mixture alternately to butter and beat gently. Ensure that it does not curdle.
Add Orange zest, Orange pulp to it and mix.
Add the dusted dry fruits to it.
Pour into cups.
Bake it for approx. 20 to 25 minutes.
Serve warm with Orange segments.
