When it is Mango season in India, every household along with having Mangoes as is either Raw or Ripe will also make several dishes using the Mangoes. This is one such Gujarati dish using Raw Mangoes.
Time required: 10 Minutes
1 Raw Mango
2 to 3 tbsp Jaggery
1 tsp Roasted Methi/Fenugreek Powder
3 – 4 Cloves
Two 1″ pieces of Cinnamon
1 or 2 Dry Red Chili
1/2 tsp Chili Powder
1/2 tsp Jeera / Cumin Seeds
1/4 tsp Hing /Asafoetida
1 tsp Oil
Salt to taste
Heat Oil, add Jeera, Cloves, Red Chili, Hing, and Cinnamon.
Add diced Mango and stir. You can also cook Raw Mango using water and peel and dice it.
Let the Mango skin change color.
Add Jaggery, Chili and Fenugreek Powders.
Let it cook for 2 minutes.
Add Salt. Stir well. Remove to a serving dish.
Serve with any type of Indian Bread.
