Eggless Banana Muffins
It is Christmas time and if your mood is set to bake, then these Muffins are the best bet….Merry Christmas!
Time Required: 40 Minutes
Ingredients:
2 ripe Robust Bananas
1 Cup Butter
1 Cup Castor Sugar
1 Cup Refined Flour / Maida
1 tsp or 1 small packet Fruit Salt / Eno
2 drops of Vanilla Essence
4 tsp chopped Cashew Nuts
Method:
Cream Butter and Sugar in a mixing bowl. Add Flour and little water and mix well. Add mashed Banana and again mix well using hands. Add Fruit Salt and Vanilla essence and mix well.
Grease muffin cups and dust them with flour.
Pour the mixture into the cups leaving ½ cm space from top.
Bake in pre heated oven at 180 degreees and bake for 15-20 minutes.
Let it cool, upturn the muffins and serve with slices of Banana.
