Pal Puri
“Pal” means Milk and “Puri” is crisp deep fried Indian Bread. This dish is a combination of crispy puris with sweetened condensed milk.
Time Required: 30 Minutes
Ingredients:
2 Cups Chiroti Rawa / Fine Semolina
1tbsp Ghee / Clarified Butter
A pinch of Salt
For the condensed Milk:
8 Cups Milk
2 Cups Sugar
10 – 12 strands of Saffron soaked in Milk
2tsp Cardamom Powder
Method:
For the Puris:
Mix Rawa, Ghee, Salt and little water to form a dough. Keep it aside for 2 hours. Divide the dough into small balls. Roll the balls as thin as possible and deep fry them till crisp and golden brown.
For the Condensed Milk:
Boil Milk and Sugar until it is reduced to half. Add Saffron Milk and Cardamom Powder and mix well. Remove an dkeep aside.
Assembling:
Dip the crisp Puris in the condensed milk and place it on a tray. Repeat for the other puris and place them one above the other. Pour the remaining Milk over the puri pile.
To Serve:
Fold a single Puri and serve along with little Milk.
