Raitha is a dish prepared using Yoghurt in India. This is served as an accompaniment with Indian Bread and Pulav or Biryani (Spicy flavorful rice). During summer this is a prepared dish in most of the households. Raitha differs in all regions of India. This Boondi Burani Raitha Recipe is from North India and Chik Pea fritters are dropped into the Yoghurt to make this incredibly refreshing dish.
Ingredients:
4 Cups of Curds / Yoghurt
1/2 Cup Boondi soaked in water
1/2 tsp Black Salt
1 tsp Roasted Jeera / Cumin Powder
1/2 tsp Chili Powder
Few sprigs of Coriander leaves, chopped finely
1 Green Chili, chopped (Optional)
1 tsp Sugar (optional)
Salt to taste
Seasoning:
1tbsp Oil
1/2 tsp Jeera / Cumin seeds
4 cloves Garlic, crushed or minced
Method:
In a big mixing bowl, add Curds and whisk gently until it is smooth. Add Black Salt, Salt, Roasted Jeera, Chili Powder, Coriander leaves, Green Chilies, and Sugar. Mix well.
Remove the Boondi from water and add to the Curd mixture.
In a kadai heat Oil and add Jeera and when they splutter, add Garlic and give it a stir.
Add this seasoning the Boondi Raitha and mix.
Serve with your choice of Indian Bread, Pulav, or Biryani.
