Mango Rice – Mavinakayi Chitranna

It is locally called as Mavinakayi Chitranna, it is a spicy rice prepared using raw mangoes and spices.  This is usually prepared during Ugadi festival along with Huranada Holige/Sweet Bread.

Required Time: 30 Minutes
Serves: 4

Ingredients:
8 Cups of Cooked Rice
6 Dry Red Chilies
2tsp Methi (Fenugreek) Seeds
1 Cup Grated Raw Mango
1 Cup Fresh Grated Coconut
Salt to taste

For the Seasoning:
3tbsp Oil
2tbsp Ground Nuts
1tbsp Channa Dal/Bengal Gram
1/2 tbsp Urad Dal/Split Black Gram
2tsp Mustard Seeds
1tsp Turmeric Powder
Few Curry Leaves

Method:
Make sure that the cooked rice is not sticky.  Spread the Rice on a plate.

Roast the Red Chilies in few drops of Oil and grind coarsely, similarly roast Methi Seeds and grind to a powder. Add Red Chilies, Methi powder, Coconut, Raw Mango and Salt to the Rice and mix well and keep aside.

Heat Oil in a kadai and add Channa Dal, Ground Nuts and Urad Dal. When they are about to turn pink add the Mustard Seeds and let it splutter. Now add the Turmeric powder and Curry leaves and immediately remove from flame and pour this seasoning on the Rice. Mix well. Leave it aside in a serving bowl for an hour. This will help the Rice to soak in the masala. Serve with Kosambari and Ambode.
