Ulundogare recipe – Urad Dal Rice recipe – Ullandogare – Ulundhorai

Ulundogare

Ulundogare is prepared for naivedya (blessed food) in temples.  It is a healthy meal with the right amount of carbohydrates and complex carbohydrates.  The flavor is derived from roasted split black gram.

Ingredients:
4 tbsp Uddinbele Split Black gram / Urad dal
1 tsp Peppercorns or 4 to 5 dry red chilies&nbsp
2 tbsp Ghee
1/2 cup grated Dry Coconut
2 cups Cooked and cooled Rice

Seasoning:
2 tbsp Ghee
1 tsp Mustard seeds
1 tsp Urad dal
1 tsp Kadale bele / Split chik pea / Channa dal
1 tbsp Peanuts (optional)
A pinch of Hing
Few Curry leaves

Method:
Heat Ghee, add Uddina bele and Peppercorns/red chilies and fry until golden brown.

Reduce the heat and add Coconut and sauté for 30 seconds.

Remove and grind to a powder and keep aside.

In a kadai heat Ghee for seasoning and add Mustard Seeds, and when they splutter, add Kadale bele, Peanuts, uddin bele and when they turn pink, add Hing, Curry leaves, and Dry red chilies, 

Add the cooked Rice and the Uddinabele powder.

Add Salt to taste.

Mix well. Remove to a serving dish and let it rest for an hour before serving.

Instead of Peppercorns, if you use Dry Red Chilies, the Rice will be Red in color.
