Palak Rice – Spinach Rice Recipe

Spinach Rice is a healthy dish.  This is great to pack for lunch to school or office.

Time Required: 30 Minutes

Ingredients:
1 Bunch Palak / Spinach, Chopped
1 Cup Rice
1 Onion, Chopped finely
2 Bay leaves
Few Pepper Corns
3 Cloves
1tsp Mustard Seeds
1tsp Jeera / Cumin seeds
Few Cashew nuts, Chopped
2tbsp Oil
1tbsp Chili – Ginger paste
Salt to taste

Method:
Heat Oil, add Mustard Seeds, Jeera, Bay leaves, Cloves, and Pepper Corns. Add Chili – Ginger paste and Onion and sauté for a minute.

Add Spinach and stir for few seconds.

Add Rice, Cashew nuts and stir.

Add 2 ½ Cups of water and close the lid and cook until the rice is soft.

Remove to a serving dish and serve with your choice of Dal and Raitha.
