Quinoa Soup

Quinoa Soup

As the title suggests, the soup is prepared using Quinoa.  Healthy and wholesome food and great when it is a wet and cold evening.

Time required: 30 Minutes

Ingredients:
2 Glasses of Vegetable Stock
1/2 Cup cooked Quinoa
1/2 Cup Sweet Corn
2 Pods Garlic, Minced
1 Onion, Chopped
1 Potato, Peeled and Chopped
1 Tomato, Chopped
1 Green Chili, Minced (Optional)
1 small Capsicum, Chopped
Juice of one Lemon
1 tsp Roasted Cumin Powder
1 tsp Ground Pepper
Few sprigs of Coriander leaves, Chopped
2 tsp Olive Oil
Salt to taste

Method:
Heat Oil and add Garlic and Onion. Saute for a minute.  Add Capsicum and Saute.  Add Tomato and Green Chili and saute.  Add Potato, Sweet Corn, Salt, and Vegetable stock and let it come to a boil.  Add Quinoa and cook until Potato is soft.  Add Cumin Powder, Pepper Powder, and Lemon Juice and stir. 

Remove to bowls and serve hot garnished with Coriander leaves.
