Black Rice Tomato Soup Recipe

Black Rice Soup

It is that time of the year when the cold bites even in South India!  Steaming hot Black Rice Tomato Soup would be so ideal for the evening with a Bread infused with herbs!

Time required: 30 minutes

Ingredients:
8 Cups of Vegetable broth
5 Tomatoes
1 tsp Olive oil
Few sprigs of fresh Basil
1 tsp Dried Oregano
3 Pods Garlic, Minced
1 Cup cooked Black Rice
1 tbsp Dates syrup
Crushed black Pepper to taste
Salt to taste

Method:
Cut Tomatoes into big pieces. Cook Tomatoes with Vegetable broth until soft.  Let it cool and blend to a smooth consistency.

Heat Oil and add Garlic and fresh Basil and saute for 5 seconds and add the cooked Black Rice. 

Saute for half a minute.

Add the Tomato mixture and let it cook for a minute.

Add Salt, Dates syrup, Oregano, and Pepper. Mix well.

Pour into cups.

Garnish with fresh Basil leaves and serve.
