Watermelon Soup

Time Required: 20 Minutes + Chilling Time
Serves: 2


Ingredients:
4 Cups Watermelon, deseeded and cubed
Juice and rind of 1 Orange
½ Cup Yoghurt/Hung Curds
A pinch of Nutmeg Powder
½ tsp Jeera (Cumin) Powder
2tbsp Honey
Chopped Coriander leaves for garnishing
Salt to taste

Method:
Mix Watermelon, 2 Cups of Water, Honey, Cumin Powder and Lemon rind and bring it to a boil, stirring constantly. Allow it to cool. Add Orange juice and run it in a liquidizer. Stir in the Curd, Orange rind and Salt.

Chill the soup and serve garnished with Coriander leaves and Nutmeg powder.
