Peas Pulao

Flavored rice with peas.  This recipe is from North India.

Time Required:  30 Minutes

Ingredients:
2 Cups Basmathi / Long grained Rice
4 Cups Water
1 Cup Shelled Peas
1 Onion, Chopped finely
1tsp Ginger-Garlic paste
1tsp Green Chili Paste
2 – 3 Bay Leaves
4 Cloves
3 Cardamom
3 one inch stick Cinnamon
6 – 7 Peppercorns
1 tsp Cumin Seeds
2 tbsp Ghee / Clarified Butter or Oil of your choice
1/2 tbsp Oil to fry Onions
Salt to taste

Method:
Soak Basmathi Rice for half an hour.  Heat Ghee / Oil in a Handi / cooking pot, add Bay leaves, Cloves, Cumin Seeds, Cinnamon, Crushed Cardamom, Peppercorns and half of the chopped Onions and sauté.  Add Ginger-Garlic-Green Chilies paste and sauté until the moisture evaporates.  Sieve Rice and add to seasoning along with Salt and gently mix.  Add Peas and water and close the Handi and cook until done.

Heat 1/2 tbsp Oil and fry the remaining Onions until dark brown.  Garnish the pulao with this Onion and serve hot with Dal Makhani or Paneer Butter Masala.
