Beerakaya Fry – Ridge Gourd Stir Fry – Heerekayi Palya – Turai Subzi

Beerakaya Fry

Beerakaya Fry is a side dish prepared using Ridge Gourd / Heerekayi.

Time Required: 30 Minutes

Ingredients:
1 Beerakaya / Ridge Gourd / Heerekayi, Peeled and Diced
Few Curry leaves
2tbsp Vepudu Karam (Masala Powder)
Few sprigs of Coriander leaves, Chopped finely
1/4 Cup Fresh Coconut
1tbsp Roasted Ground nuts
2tbsp Oil
1tsp Jeera / Cumin Seeds
1tsp Mustard Seeds
1 Dry Red Chili
1tsp Urad Dal / Black Gram Split
1tsp Channa Dal / Bengal Gram Split
1/2 tsp Turmeric Powder
Salt to taste

Method:
Heat Oil, add Jeera, Urad Dal, Channa Dal, and Mustard Seeds. When the Dal turns pink, add Curry leaves, Red Chili, and Turmeric Powder.

Add Beerakaya pieces and stir. Close the pan and let it cook for two minutes on medium flame. Open the lid and stir.

Let it cook for another minute.


Add the Vepudu Karam, Salt and mix well. Close the lid and let it cook for a minute or two. Add Coconut, Groundnuts and mix well.

Remove Beerakaya Fry to a serving dish and garnish with Coriander leaves and serve hot with Plain Rice or Chapathi.
