Subz Bahaar – Vegetables cooked with spices – Stir fried Vegetables

Subz Bahaar is a delicious side dish prepared using assorted vegetables and spices.

Cuisine: North Indian

Time required: 25 minutes

Ingredients:
1 Carrot, diced
1 Potato, peeled and diced
5 French Beans, cut into inch pieces
Few Cauliflower Florets
1/4 Cup Shelled Peas
1 Tomato, Remove seeds and slice
1/2 Cup Capsicum slices
2 Bay leaves
Few Pepper Corns
Two, 1″ Cinnamon
Few sprigs Coriander leaves, chopped finely
4 tbsp Oil
Salt to taste

For the masala:
6 – 7 Red Chilies
8 Peppercorns
1 or 2 tsp Jeera / Cumin seeds
1 tsp Ginger-Garlic

Method:
Roast the ingredients for the masala and powder coarsely.

Heat Oil in a Kadai, add Bay leaves, Peppercorns, and Jeera.

Add all the vegetables except for Tomato and Capsicum.

Stir fry for two minutes.  Close the kadai and let it cook for another two minutes.  Add Salt and 2 tbsp Masala powder.

Mix well.  Close the kadai and cook until the vegetables are soft.  Add Tomatoes and Capsicum and stir-fry for another two minutes.

Remove to a serving dish and garnish with Coriander leaves.  Serve hot with your choice of Indian Bread.
