Khaman Kakdi – Cucumber Salad – Maharashtrian Cucumber Salad – Kakdi Kuchumber

Khaman Kakdi

Khaman Kakdi is a salad prepared using tender Cucumbers.   Simple, easy, and impressive.

Time required: 10 Minutes

Ingredients: q q
1 tender Cucumber, peeled and chopped finely
1/4 Cup Grated Fresh Coconut
Few sprigs of Coriander leaves, chopped finely
1 tbsp Roasted and peeled Peanuts / Groundnuts
1 tsp Oil
1/2 tsp Jeera / Cumin Seeds
1/4 tsp Hing / Asafoetida
1/2 tsp Mustard Seeds
1 or 2 Green Chilies, chopped finely
Juice of half Lemon
1/2 tsp Sugar (Optional)
Salt to taste

Method:
In a mixing bowl, add Cucumber, Coriander leaves, Coconut, Salt, Sugar, Peanuts, and Salt.  Gently mix. Heat Oil and add Mustard Seeds, Cumin Seeds, and Hing.  Remove from heat and let it cool.

Add the seasoning to the Cucumber mixture and gently toss.

Remove to a serving dish and serve.
