Black Rice Salad

Black Rice Salad

Black Rice is full of flavor on its own and when teamed with garden fresh vegetables and Lemon seasoning, it becomes a wholesome delicious irresistible dish. The Rice when cooked turns a deep purple.

Time required: 25 Minutes

Ingredients:
1 Cup Black Rice 
6 – 8 Walnuts
4 scallions, Chopped
8 – 10 Beans, Cut into 1″ pieces and steamed
1/4 Cup boiled Peas
1/2 Yellow or Red Pepper
10 – 12 Baby Tomatoes, Halved
4 ounces green beans, thinly sliced (about 1 cup)
Juice of 1 Lemon
1 tbsp Honey
2 tbsp extra-virgin Olive Oil
Freshly ground black pepper according to taste
Salt to taste

Method:
Cook Rice and let it cool. Roast the Walnuts.  Whisk Olive Oil, Salt, Pepper, Honey, and Lemon.  In a mixing bowl add Rice, Walnuts, and Vegetables.  Pour the dressing and toss.

Chill for half an hour and remove to a serving dish and serve Black Rice Salad.
