Tomato Onion Uthappam

Thick Crepe/Pancakes with Tomatoes and Onion.  Tomato Onion Uthappam is a very tasty breakfast and popular in South India.

Time Required: 20 Minutes + Soaking time + Fermenting time

Ingredients:
2 Cups Rice
¾ Cup Urad Dal
½ Cup Avalakki/Poha/Flattened Rice
2tbsp Tuvar Dal/Red Gram Split/Pigeon Peas
¾ tbsp Methi/Fenugreek Seeds
1 Tomato
1 Onion
2tbsp chopped Coriander Leaves
3 Green Chilies, Chopped finely
2 Sprigs Curry Leaves, Chopped finely
Oil for roasting
Salt to taste

Method:
Wash Rice and Urad Dal. Soak Rice, Urad, Tuvar Dal and Methi seeds for 4 to 5 hours. Soak Avalakki for 5 minutes.  Remove excess water and grind along with Avalakki to a batter consistency. Remove to a vessel, close and let it stand overnight or 6 to 7 hours.

Add Salt, Tomatoes, Onions, Coriander leaves, Curry leaves and Green Chilies and mix well. If it is very thick few cups of water can be added, but ensure that the consistency is not watery.

Heat a flat tava/griddle and grease it with a teaspoon of Oil. Take spoonful of the batter and spread it thickly on the tava/griddle in a circle shape using fingers. 

Sprinkle a teaspoon of Oil and close the Dosa and roast for a minute. 

Remove the lid and flip the Dosa and roast again. Remove to a serving plate.

Serve hot with Chutney of your choice.
