Peas Soup

Time Required: 20 minutes
Serves: 6

Ingredients:
2 Stalks Leek or 3 or 4 Spring Onion, Chopped
1 Potato, Peeled and Chopped and Boiled
2 Cups Shelled Peas, Boiled
1 Bunch Spinach
6 Cups of Vegetable Stock
1tbsp Cream (Optional)
1tbsp Butter
Salt to taste

For the Garnishing :
Cucumber, Chopped finely
Tomato, Chopped finely
Grape or Apple, Chopped finely
Olives, Chopped finely

Method:
Heat Butter, add Leek, Potato, Peas and Spinach and stir for a minute.  Add 1 Cup Vegetable stock and let it cook for another minute. Add Cream and Salt.  Blend in the mixture.  Add more vegetable stock and cook for another minute.

Pour in a soup bowl and garnish with bits of Cucumber, Tomato, Grape or Apple, and Olives.
